Brewing
Chai
In water: Use 1 teaspoon tea for every 6-8oz boiling water. Brew for 4-6 minutes, remove infuser.
In Vanilla Soy Milk (a favorite!): Use 1 tablespoon for every 8oz simmering soy milk (do not let boil). Brew for 4-6 minutes, remove infuser/strain tea.

Black Tea
Use 1 teaspoon tea for every 6-8oz of boiling water. Brew for 4-6 minutes, remove infuser/stain tea.
Green Tea
Use 1 teaspoon tea for every 6-8oz water. Use water that is 175-190 degrees, or simmering. Brew for 3-5 minutes, remove infuser/strain tea. Green teas are easy to “burn”, which is why boiling water is not suggested.
White Tea
Use 2 pinches of tea for every 6-8oz water. Use water that is about 175 degrees, or just as bubbles are starting to break the surface of the water. Brew for 2-3 minutes, remove infuser/strain tea. White tea can be re-brewed if leaves are left wet. Adjust time for second brewing, 3-5 minutes.
Oolong Tea
Use 1 teaspoon tea for every 6-8oz of boiling water. Brew for 4-6 minutes, remove infuser/strain tea. Oolong is excellent re-brewed, even changing flavors. If leaves are kept wet, you may brew up to 4 more times. Adjust time of brew for each additional one, adding a minute or two.
Herbal Tisanes
Use 1 teaspoon for compact herbals (like Hibiscus Mint), or 1 tablespoon for full, light herbals (like Chamomile Mint) for every 6-8oz boiling water. Brew for 4-6 minutes. It is not necessary to remove the infuser, as herbal teas will not become bitter.
Rooibos
Use 1 teaspoon of rooibos for every 6-8oz boiling water. Brew for 4-6 minutes, remove infuser/strain tea.
